I quit my job. It was time, I'd been there for more than year, and was looking for a new challenge. I was offered a part time position at Tails, a nationally distributed magazine about pets. I write for the five east coast magazines. Unfortunately, they were only able to offer me a part time position. Luckily, that leaves me plenty of time to cook! And to make breakfast on weekdays like this delicious brioche French Toast. Maybe being underemployed isn't such a bad thing after all?

Underemployed is the new lucrative
